Making Wild Blackberry Preserve the Right Way

It takes work to cultivate wild blackberry preserve properly. For starters, the very act of picking wild blackberries leaves one scratched and stained.

The best wild blackberry preserve is crafted by small producers who have the patience and tolerance to deal with the rowdy blackberry. Ingredients are simple: If you wanted to make a batch yourself you'd need 6 and a half pounds of blackberries, a quarter-pint of water, some lemon juice, approximately six pounds of sugar, and 1/2 tablespoon of vanilla extract. Combine everything in a large saucepan & bring to a boil over medium-high heat; then pour the mixture into a ceramic or glass bowl. Cover with parchment, refrigerate and let stand overnight.

In the morning, pour the wild blackberry preserve mixture into a preserving pan, and vanilla if using. Bring to a boil and cook for about 10 minutes until the jam is set. Pour into sterilized jars and seal.
